SoLove this idea! You can make them in advance and grab one to bring with you to work or for a fast lunch at home on a busy day! What do you need to know before you start? -Choose a wide mouth quart size mason jar. -Salad dressing goes into the jar first. -Hard, chunky vegetables, legumes and sturdy grain go in next, because they can stand sitting in the jar without getting soggy. -Your choice of protein goes in next (fish, chicken, shrimp, cheese, ...). -Seeds, nuts, raisins, cranberries or other tasty bits go in next. -Your greens of choice go in last. They will stay crisp if they are separated from the wet ingredients. -If you bring it to work, don't forget a fork and a large bowl. Empty the salad in the bowl and enjoy:-)!
